The Amaranthus flower is also known as the Pigweed. This type of flower is also known as an herb, even though to some people, it is no more than a mere weed. The Pigweed has been raised as a leaf vegetable, an ornamental flower, and even as a cereal! This is one of the edible flowers that contain such things as calcium, iron, magnesium, phosphorus, potassium, zinc, copper, and manganese, besides vitamins A, B6, C, and riboflavin.
